Meet The Chef

Before joining the team at the Lodge & Spa, Executive Chef Daniel Grunbeck’s culinary talents were honed at notable restaurants like The Little Nell in Aspen, Colorado, The Peninsula Grille in Charleston, South Carolina, and The Ocean Room on Kiawah Island in South Carolina.

Green House

Our new 6,480 square-foot greenhouse allows the entire property to grow as many ingredients as possible on-site. The state-of-the-art facility produces over 100 different items, including myriad greens and vegetables such as zucchini, radish, eggplant, tomatoes, and even some exotic fruit.

Wine & Spirits

As a premier Wyoming dining destination, the Lodge & Spa at Brush Creek Ranch offers a full selection of wine and spirits to complement our unforgettable ranch cuisine. Our 800-bottle wine cellar in the Trailhead Lodge houses a grand selection of vintages from all over the world, perfectly suiting the diverse array of dishes created by our Executive Chef Dan Grunbeck.

Our luxury dude ranch also features a complete mixology program, featuring handcrafted cocktails at all of our dining venues. Highlighting local ingredients and specialty spirits, these beverages add a festive flair to every meal and special event. We are also pleased to offer non-alcoholic kid-friendly beverages at Creekside Dinner Camp and other dining venues.
